net-mgmt/zabbix*-server: Switch to respect DEFAULT_VERSIONS for MySQL
To help tracking of default MySQL client version, switch the default MySQL
requirement from fixed version (8.0, 8.4, ...) to DEFAULT_VERSIONS.
